  1. 4 green onions , white and light-green parts only, finely chopped

  2. 1/4 cup(s) light miso

  3. 4 teaspoon(s) grated peeled fresh ginger

  4. 1 tablespoon(s) brown sugar

  5. 1/4 teaspoon(s) ground red pepper (cayenne)

  6. 1 whole(s) salmon fillet with skin (3 to 3 1/2 lbs.)

  7. Pea shoots and chives for garnish

  1. Preheat oven to 400 degrees.

  2. In small bowl, mix chopped green onions, miso, grated ginger, sugar, and ground red pepper.

  3. Line large cookie sheet with nonstick foil. Place salmon, skin side down, on foil. Rub miso mixture on flesh side of salmon fillet.

  4. Bake salmon 22 to 25 minutes or just until salmon turns opaque throughout. (To test, insert tip of small paring knife into thickest part of flesh.) With 2 large metal spatulas, transfer salmon to large platter; garnish with pea shoots and chives to serve.
