  1. 1 1/2 cup flour , sifted

  2. 1/2 cup yellow cornmeal

  3. 4 tsp baking powder

  4. 1 1/2 tsp salt

  5. 1 tbsp sugar

  6. 2 lg eggs , separated

  7. 2 cups skim milk

  8. 1/4 cup vegetable oil

  1. How to make it Sift flour and other dry ingredients together in a large bowl. Beat yolks then add them to th milk. Add oil, and whisk together. Add to the dry ingredients and stir just until moistened and smooth.. DO NOT Over stir. It will be lumpy. Beat eggs whites until stiff and fold gently into the batter. Pour by 1/4 cupfuls onto hot griddle. (350 f-375 f ,depending upon yours) Cook until edges are dry and top is bubbly, flip over until light brown. Hold in a warm oven until all are cooked. Serve with lots of butter, syrup or preserves.
