  1. 1/2 pound hash brown potatoes frozen

  2. 4 ounces italian sausage removed from casing

  3. 2 large eggs

  4. 1/2 cup onions diced

  5. 1 ounce cheddar cheese shredded

  6. 5 ounces soup, cream of potato

  7. 1/3 to 1/2 of a can, we use leftover homemade soup

  8. 1 x salt and black pepper to taste*

  1. Cook the hash browns with the onion till crisp.

  2. Add the bacon or sausage and cook until just beginning to brown, drain off any excess fat (if any).

  3. Remove from heat, add the soup, cheese, beaten eggs and black pepper to taste. (No need to add salt as the soup, bacon or sausage will have more than enough seasoning)

  4. Transfer the mixture to a suitably sized oval baking dish. Top with a bit of cheese if desired.

  5. Bake for 30 in a 350 degree F oven .

  6. Allow to rest about 5 minutes before serving.
