  1. 600g potatoes, peeled

  2. 2 cups fresh breadcrumbs

  3. Finely grated rind and juice 1 lemon

  4. 40g butter, melted

  5. 1/4 cup finely grated parmesan

  6. 4 spring onions, thinly sliced

  7. 1/2 cup cream

  8. 2 x 106g cans sardines in springwater, drained

  9. Green salad, to serve

  1. Potato & sardine bake with lemon crumb topping Preheat oven to 190°C. Lightly grease an 8-cup ovenproof dish.

  2. Parboil potatoes in boiling water for 10 minutes. Drain, cool, then cut into slices.

  3. Combine breadcrumbs, lemon rind and juice, butter and parmesan. Season.

  4. Toss together potato, spring onions and cream and arrange over base of dish. Top with sardines and sprinkle with crumb mix. Bake for 15-20 minutes, until potato is tender and crust is golden. Serve with green salad.
