  10. 1 cup cold boiled onions

  11. 2 stalks celery

  12. 1 tablespoon mixed herbs

  13. 1 cup cold tomatoes or macaroni

  1. Cut up the bones and trimmings from the beef, chops, and sirloin steak.

  2. Put meat in 4 quarts of water and put over heat. Add salt, cloves, peppercorns, egg, baked apples, onions, celery, and 1 tablespoon mixed herbs.

  3. Let all simmer until the meat separates from the bones and the water is reduced one-half.

  4. Strain. The next morning, remove the fat, heat stock to boiling point, warm with it 1 cup cold tomatoes or macaroni, and add more seasoning if needed. .
