  1. 225 g. of macaroni, cooked according to package directions

  2. 500 g. of chicken (I used thighs and legs), boiled and meat roughly chopped

  3. 250 g. of your favorite soft cheese (Monterey Jack is a nice choice), cut into small cubes

  4. 1/2 to 3/4 c. of mayonnaise

  5. 1 c. of crushed pineapple, drained

  6. 1/4 c. of sweet pickle relish

  7. salt

  8. sugar

  9. pepper

  10. To serve:

  11. toasted nuts, coarsely crushed

  12. lettuce

  1. Place the chicken, pickle relish, cheese and drained pineapple in a large mixing bowl. Add half a cup of mayo, 1 tsp. of salt, 1/2 tsp. of pepper and 1 tsp. of sugar. Toss well. Add the macaroni and toss until everything is evenly distributed. It’s easier to see the distribution by adding the macaroni last.

  2. Transfer to a container, cover and chill for at least six hours.

  3. Take out of the fridge and taste a piece of macaroni. At this time, the pasta would have absorbed the seasonings and the dressing. That’s really the thing about macaroni salad. You can never tell if it’s “right” until it has chilled and the flavors have blended. Only then can you tell what needs to be adjusted. More salt? Sugar? Pepper? Does the salad look dry? Need to add more mayo? Adjust the seasonings and the dressing, put back in the fridge, chill for another couple of hours and it’s ready to serve.

Best Foods is too soupy (malabnaw); Lady’s Choice and Kraft are too expensive. the reason I ask is… mayo is always inside the balikbayan boxes.. padala ng mayo from here to pinas thinking is it the price or the quality am going to ask around hehehe If I may ask, where do you purchase American Maid mayo? I am not familiar with the brand … It seems that we don’t have that kind of brand in groceries around the vicinity. Have not checked Landmark and/or SM though.

  5. Sha, there must at least half a dozen brands of mayo locally. The oldies just don’t look hard enough.

  10. I read through the comments and I guess ako lang ang sobrang takaw na nagaa-add nang cubed ham and cubed Eden cheese sa kanyang macaroni & chicken salad.
