  1. 1/2c Dry lentils

  2. 3 c Water

  3. 2 tb Vinegar

  4. 2 tb Honey

  5. 1 tb Tamari

  6. 1/2ts Grated ginger

  7. 1/2c Water

  8. 1 ts Cornstarch

  9. 1 sm Onion, sliced

  10. 2 tb Oil

  11. 4 ea Celery sliced diagonally

  1. + Bring water to a boil & cook lentils for 25 minutes.

  2. Drain & set aside.

  3. combine vinegar, honey, tamari, ginger & water.

  4. Bring to a boil.

  5. mix cornstarch with a little water & add to sauce.

  6. Saute onion in oil till soft.

  7. Add pieces of celery & cook for 5 minutes over medium heat.

  8. Add lentils, mix well.

  9. Add sauce, simmer 5 minutes.

  10. Serve over rice.
