  1. Texas Mustard Greens

  2. 2 pounds tender mustard greens

  3. 1 ham hock or 1/3 pound salt pork

  4. 1 onion, chopped

  5. 2 cups water, approximately

  6. salt

  7. 1 teaspoon sugar, optional

  8. Wash the mustard greens in several changes of water. If there are

  9. tough stems, break them off and discard.

  10. Place the greens in a kettle and add the ham hock or salt pork.

  11. Add the onion, water, and salt. There should be enough water barely

  12. to cover the greens. Bring to a boil and simmer 2 hours.

  13. When ready to serve, drain and sprinkle with sugar if desired. Toss

  14. and serve hot. Many people enjoy mustard greens sprinkled lightly

  15. with vinegar.
