  2. 1 Onion - medium-size, chopped

  3. 2 Garlic cloves - finely chopped

  4. 2 tablespoons 30ml Olive oil

  5. 28 oz 795g Tomatoes - drained/chopped

  6. 1 tablespoon 15ml Capers

  7. 1/4 cup 36g / 1 1/3oz Basil - fresh, chopped

  8. 8 Black Greek olives - pitted

  9. 1 tablespoon 15ml Lemon juice

  10. 1 teaspoon 5ml Oregano - dried leaf, crumbled

  11. 1/2 teaspoon 2 1/2ml Salt - (opt)

  12. 1/4 teaspoon 1 1/3ml Pepper

  1. Recipe Instructions Preheat oven to 450F Arrange fillets in 8x8x2" square baking dish. Saute onion and garlic in oil in medium-size skillet over medium heat 3-5 minutes or until lightly softened. Add tomatoes, capers, basil, olives, lemon juice, oregano, salt if using, and pepper. Simmer, stirring occasionally, 8 minutes. Spoon sauce over fish. Bake in preheated 450F oven for 10 minutes or until cooked through.
