  1. 2 tablespoons strong brewed tea, preferably Earl Grey

  2. 1 tablespoon white-wine vinegar, or Champagne vinegar

  3. 1 tablespoon walnut oil

  4. 1 tablespoon minced shallots

  5. 1 teaspoon Dijon mustard

  6. Salt & freshly ground pepper, to taste

  7. 3 cups washed, dried and torn red leaf lettuce

  8. 3 cups washed and dried watercress leaves

  9. 1 ripe pear, preferably red, cored and thinly sliced

  10. 1 ounce Roquefort cheese, crumbled

  11. 1 tablespoon chopped toasted walnuts

  1. Whisk together tea, vinegar, oil, shallots, mustard, salt and pepper in a large bowl.

  2. Add lettuce and watercress together and toss to coat. Divide among 4 salad plates, decoratively arranging pear slices over the lettuce mix. Sprinkle cheese and walnuts on top and garnish with a grinding of pepper.
