  1. BANANA PASTA

  2. 1 cup banana pulp

  3. 1/3 cup granulated sugar

  4. 1 tsp vanilla extract

  5. 1 egg

  6. 2 cups semolina flour

  7. Blend the banana, sugar, vanilla and egg together. Blend in the

  8. flour. Knead into a smooth ball (add small amounts of ice water

  9. 15 minutes and allow to rest

  10. for an additional 15 minutes. Roll out the dough. Lightly dust

  11. 3, and roll out again. Repeat

  12. 6 to 8 times.

  13. Now pass the dough through the pasta machine setting the rollers

  14. gradually down until you reach the desired thickness. The result

  15. should be a smooth sheet of dough ready to process as you require.

  16. Pass through a pasta machine, or cut by hand to desired size. If

  17. processed by hand, simply roll the dough and cut into thin strips

  18. for noodles (fettuccini).
