  1. 7 (3/4-inch-thick) ciabatta bread slices

  2. 5 large eggs

  3. 1/2 cup whipping cream

  4. 1/2 cup half-and-half

  5. 1/2 cup refrigerated pre-chopped onion (see Notes)

  6. 1 (8-oz.) package shredded Mexican four-cheese blend

  7. 1/2 (8-oz.) package shredded Monterey Jack cheese

  8. 1 (4 1/2-oz.) can chopped green chiles , drained

  9. 1 (2-oz.) jar diced pimiento, drained

  1. Preheat oven to 425 F. Tear bread into bite-size pieces to equal 6 cups, firmly packed.

  2. Combine eggs, cream, half-and-half, onion, Mexican cheese, Monterey Jack cheese, chiles , and pimiento in a large bowl. Gently stir in bread. Pour bread mixture into lightly greased 9-inch deep dish pie plates.

  3. Bake at 425 F. for 20 to 22 minutes or until browned and set. Serve immediately.

  4. Yield: 8 servings Author's Notes: Look for prechopped onion in the refrigerated produce section.
