  1. Directions for Preparation Clean the green tomatoes and onion, and chopped them. Sprinkle salt and mix well the chopped tomato and onion in a large bowl. Then, allow the mixture to stand overnight. Next day, you can drain off the liquid and add ¾ part of vinegar. In a medium high heat, bring the tomato and vinegar mixture to boil. Continue to boil for 10 minutes and pour sugar. Stir the mixture well and boil for another 1 hour, till the tomato turns soft. In a small bowl, mix curry powder, mustard powder, pepper and remaining vinegar together. Add this to the tomato pickle and stir well to combine the mixture. Reduce flame and simmer for about 5 - 7 minutes. Allow the sweet green tomato pickle to cool down before transferring it into an airtight container. Spicy Green Tomato Pickles Ingredients 4 medium green tomatoes 2 garlic cloves 3 jalapeno peppers 1 teaspoon canning salt 2 cups vinegar 1 cup water Directions for Preparation Prior to making hot green tomato pickles, set up quarter size, wide-mouth jars with tight lids. In a large bowl, cut tomatoes in four equal parts and keep aside. By the meantime, boil 2 parts of vinegar and 1 part water in a saucepan. Add 2 cloves garlic and 2 - 3 jalapeno peppers in each of the jars. Then, add quartered green tomatoes in equal amounts and sprinkle 1 teaspoon salt in each jar. Once, you add all these pickle ingredients, pour boiling vinegar and water solution to the jars. Put the lids on, shake and preserve for one month in the refrigerator to get a rich flavored green tomato pickle. Refrigerator Green Tomato Pickles Ingredients 5 green tomatoes 3 onions 6 cloves garlic 3 small sized hot peppers (seeded) 2 sweet red peppers 3 small dill heads 4 large carrots 3 teaspoons mixed pickling spices Hot pepper flakes 2 cups white vinegar 5 cups water Directions for Preparation In order to prepare this refrigerator green tomato pickle, you will need a large mixing bowl and 3 airtight jars. First of all, wash all the vegetables (excluding onion and garlic) and allow them to dry. You can core the green tomatoes and cut each of them into six wedges. Cut the hot peppers into two halves, sweet red peppers into slices and carrots into thin strips (1 ½ inch length). Then, peel and quarter garlic cloves. Same way, prepare the onions into thin slices. In three jars, separate the cut vegetables, onions and garlic equally. Add 1 dill head and 1 teaspoon pickling spices in each of the three jars. Boil water and vinegar and divide into three parts. Pour one part of the boiling vinegar and water in each of the jars containing green tomato mixture. Close the lids, shake well and refrigerate the green tomato pickles.
