  1. 8-10 Colassal Size sea scallops kosher salt & Fresh cracked black pepper

  2. 8-10 small strips of bacon ( long enough to wrap around your scallop)

  3. 16-20 thin strips of fresh Jalepeno

  4. 4 garlic cloves minced

  5. 4 T butter

  1. How to make it Salt and Pepper your Scallops Assemble the scallops as followed: place two jalepeno strips on opposite sides of the scallop and then wrap with a strip of bacon. Secure the bacon and jalepeno to the scallop with a toothpick. Heat your grill or oven up to 400 Place your cast iron skillet on the grill and saute the garlic in the 4 T of butter. Add the scallops to the skillet and cook for Approx 7-8 min, turning halfway.
