  1. 1/4 cup 49g / 1.7oz Butter - room temperature

  2. 1 teaspoon 5ml Coarse salt

  3. 1/2 teaspoon 2 1/2ml Freshly-ground black pepper

  4. 1/2 teaspoon 2 1/2ml Ground cinnamon

  5. 8 Loin-cut lamb chops - (3 to 4 oz ea)

  1. Mix together butter, salt, pepper and cinnamon to make thick paste. Rub 1/2 tablespoon seasoned butter over each lamb chop.

  2. Cook lamb chops in large dry skillet set over medium-high heat until browned, 4 to 5 minutes per side. Turn once halfway through cooking. (If exposed bone looks bloody, hold chop with kitchen tongs and press bone against skillet 10 seconds be-fore removing from skillet to rest.)

  3. Let chops rest 2 to 3 minutes before serving.

  4. This recipe yields 4 servings.
