  1. 2/3 cup 157ml Dried apricots

  2. 1/2 cup 99g / 3 1/2oz Butter

  3. 1/4 cup 49g / 1.7oz Sugar, granulated

  4. 1 1/3 cups 83g / 2.9oz All-purpose flour

  5. 2 cups 396g / 13oz Eggs (medium)

  6. 1 cup 160g / 5.6oz Brown sugar

  7. 1/2 teaspoon 2 1/2ml Baking powder

  8. 1/4 teaspoon 1 1/3ml Salt

  9. 1/2 teaspoon 2 1/2ml Vanilla extract

  10. 1/2 cup 73g / 2.6oz Chopped nuts, your favorite

  11. 1/2 cup 46g / 1.6oz Coconut, shredded

  1. Preheat oven to 350F. Rinse apricots and cover with water and boil for 10 minutes. Drain and cool and chop. Combine butter, sugar and 1 cup of the flour and blend together until crumbly. Pack dough into bottom of 8 x 8 inch square baking pan.

  2. Bake for 15-18 minutes, until lightly browned. Beat eggs, vanilla and gradually beat in brown sugar. To the remaining 1/3 cup of flour, add the baking powder and salt and blend well. Add the flour mixture to the egg mixture and blend well. Stir in nuts, coconut and apricots.

  3. Spread over the baked layer and bake another 30 minutes longer. Cool. Cut into bars.
