  1. 1 cup soft-medium tofu

  2. 1 cup dry sweetener

  3. 2 teaspoons vanilla extract

  4. 4 tablespoons oil

  5. 4 tablespoons cocoa powder

  6. 1 1/3 cups whole wheat flour

  7. 2 teaspoons baking powder

  8. 3/4 cup pecans , chopped

  1. Preheat oven to 350 degrees F.

  2. In food processor, blend tofu, sweetener, vanilla, oil, and cocoa powder.

  3. Mix pecans with tofu mix. If batter is too dry, add a splash of water.

  4. Spoon into sprayed 8x8 cake pan and bake for 20-25 minutes.
