  2. POTATO SCONES

  6. 1 lb Potatoes

  7. 1/2 ts Salt

  8. 1 c Wholewheat flour

  9. Cook the potatoes until tender. Peel them & mash

  10. them. This can be done ahead of time, or use leftover

  11. potatoes. Add the salt & flour to the potatoes & knead

  12. the mixture well. Roll it out thinly on a floured

  13. board & cut into rounds or triangles. Bake at 500F for 10 minutes, turning them after

  14. 5 minutes. Serve warm
