  1. MONDAY CASSEROLE

  2. 400g pork mince

  3. 1/2 cup white breadcrumbs

  4. 1 egg well beaten

  5. 1/4 cup milk

  6. 2 Tbsp chopped parsley

  7. 1/4 tsp dried sage

  8. 1 garlic clove, crushed

  9. 100g finely chopped mushrooms

  10. salt, black pepper to taste

  11. 8 thinly sliced rashers bacon

  12. 4 large potatoes, peeled and thinly sliced

  13. 1 to 2 Tbsp melted butter

  14. 4 large tomatoes

  15. 1 cup grated cheese

  16. Combine the mince, breadcrumbs, egg, milk parsley, sage, garlic,

  17. mushrooms, salt and pepper. Mix thoroughly. Form into eight

  18. sausage shapes. Wrap each in a rasher of bacon and set aside.

  19. Place potato slices in well greased rectangular or oval ovenproof

  20. dish. Season with salt and pepper. Brush the potatoes with melted

  21. butter. Arrange the meat rolls down the centre of the dish and cover.

  22. 200 C for 30-40 minutes. Cut tomatoes

  23. in half and place around the edge of dish. Sprinkle the grated

  24. cheese over the top of meat rolls and tomatoes. Return to oven

  25. and cook uncovered for a further 10-15 minutes or until potatoes

  26. are tender and cheese is golden brown. **
