  1. 1/2 cup 118ml Skimmed or reconstituted nonfat dry milk

  2. 1/2 cup 99g / 3 1/2oz Egg beaters carton -

  3. 1egg

  4. 4 teaspoons 20ml Nonfat plain yogurt*

  5. 2/3 cup 131g / 4.6oz Sugar

  6. 1 cup 237ml Peeled apples - grated

  7. 1/2 teaspoon 2 1/2ml Cinnamon

  8. 1 1/2 cups 93g / 3 1/3oz Self-rising flour

  1. Recipe Instructions *Can use t tsp yogurt and 2 tsp applesauce for more moist muffins. Grease 12 muffin wells. Preheat oven to 400F. Combine in medium mixing bowl using mixer on medium speed all ingredients. When completely combined, stir into it self-rising flour only until flour is completely moistened and dissolved. Do not over mix. You don't want to beat this like a cake batter or muffins will be heavy and maybe dry after baked. Divide batter equally among the 12 prepared muffin wells Bake about 18-20 minutes until a tester comes out clean. Cool a few minutes before loosening and removing from muffin tins.
