  2. 1 cup 237ml Red or yellow pepper - cut into small cubes (large)

  3. 1 tablespoon 15ml Fresh mint - snipped

  4. 1/4 teaspoon 1 1/3ml Salt or fresh squeezed lemon

  5. Leaf lettuce

  6. 1 Mandarin oranges

  1. Mix olive oil and a little juice from the canned mandarins.

  2. Pour over finished salads and serve.
