  7. 2 Dried black mushrooms

  8. 1/4 lb Lean pork

  9. 1 tb Cornstarch

  10. 1 tb Sherry

  11. 1 Egg white

  12. 6 Dr sesame oil

  13. 1/4 c Bamboo shoots

  14. 1 Scallion stalk

  15. 1/2 c Stock

  16. 2 ts Cornstarch

  17. 6 c Stock

  18. 1 tb Soy sauce

  19. 3/4 To 1 tsp salt

  20. 2 Eggs

  21. 1 d Pepper

  22. Soak dried mushrooms. Shred pork. Combine cornstarch,

  23. sherry & egg white; add to pork & toss to coat.

  24. Sprinkle with sesame oil. Shred bamboo shoots & soaked

  25. mushrooms. Mince scallion stalk. Blend cold stock &

  26. remaining cornstarch. Put remaining stock in a pan

  27. with mushrooms, bamboo shoots, soy sauce & salt. Bring

  28. 2 to

  29. minutes. Add cornstarch mixture & cook, stirring,

  30. until soup begins to thicken. Add pork & cook 1 minute

  31. more. Meanwhile beat eggs. Pour eggs in slowly,

  32. stirring constantly until they separate into shreds,

  33. then turn off heat. Sprinkle with minced scallions &

  34. pepper. VARIATION: For the pork, substitute chicken. - - - - - - - - - - - - - - - - - -
