  5. 1 c Cold cooked rice

  6. 1 c Milk

  7. 2 Eggs, well beaten

  8. 4 tb Melted shortening

  9. 1/2 ts Salt

  10. 2 tb Sugar

  11. 3 ts Baking powder

  12. 1 1/2 c Flour

  13. Sift flour, measure, and sift with baking powder and salt. Combine rice,

  14. milk, eggs, shortening, and sugar. Add dry ingredients. Beat only until

  15. smooth. Fill well-oiled muffin tins 2/3 full. Bake in hot oven (435ø F)

  16. 30 minutes.
