  1. Cooked Dressing:

  2. 2 eggs , well beaten

  3. 1 cup (scant) sugar

  4. 3/4 teaspoon salt

  5. 1/2 teaspoon dry mustard

  6. 1 tablespoon (heaping) flour

  7. 1/2 cup cider vinegar

  8. 3/4 cup water

  9. potato Salad ingredients:

  10. 1/2 cup cooked dressing

  11. 1 cup mayonnaise (do not use Miracle Whip )

  12. 1 tablespoon (or to your taste) prepared mustard

  13. salt and pepper , to your taste

  14. 6 potatoes , boiled until tender, drained well and diced

  15. 4 radishes , very thinly sliced

  16. 2 stalks celery , thinly sliced

  17. 1 small onion , diced

  18. 6 hard-boiled eggs , peeled and diced

  1. Place all Cooked Dressing ingredients in a medium saucepan and bring to a gentle simmer; cook until sauce is thickened, stirring constantly. Cool completely and store in a glass container in the refrigerator - dressing will keep for up to a month.

  2. To make the potato salad, add the mayonaisse, prepared mustard, salt and pepper to 1/2 cup of the cooked dressing. Prepare the other potato salad ingredients in a large bowl, and gently toss with the dressing mixture. Chill for several hours to allow the flavors to come together.
