  1. 1 cup 237ml Water

  2. 1/2 cup 118ml Quinoa - rinsed

  3. 2 cups 320g / 11oz Black bean flakes

  4. 1 1/2 cups 355ml - boiling water

  5. 2 teaspoons 10ml Chili powder

  6. 1 teaspoon 5ml Ground cumin

  7. 1/2 cup 8g / 1/3oz Fresh cilantro - chopped

  8. 2 Green onions - chopped

  9. 1/2 cup 73g / 2.6oz Red bell pepper - chopped

  10. 1/2 cup 73g / 2.6oz Plain bread crumbs

  11. 3/4 teaspoon 3.8ml Salt

  12. 2 teaspoons 10ml Vegetable oil

  13. Optional Garnishes

  14. 2 cups 474ml Lettuce - shredded

  15. 1 cup 146g / 5.1oz Grated lo-fat cheddar cheese - or cheddar-style soy

  16. 1/2 cup 118ml Nonfat sour cream

  17. 1 cup 237ml Bottled salsa

  18. Avocado - diced

  19. Ripe olives - sliced

  20. Green onions - chopped

  1. Bring 1 cup water to a boil in a small saucepan. Add quinoa, cover and simmer 15 minutes.

  2. Place black bean flakes in a medium-sized bowl. Stir in boiling water. Cover and let stand 5 minutes.

  3. Combine 1/2 cup cooked quinoa with black beans, chili powder, cumin, cilantro, green onions, red bell pepper, bread crumbs and salt. Mix well. Lightly flour hands and divide mixture into six equal balls. Flatten each ball into a 1/4-inch-thick cake.

  4. Heat oil in a nonstick skillet. Cook each bean cake about 2 minutes each side. Serve topped with lettuce, cheese, nonfat sour cream, salsa and other garnishes, as desired.
