  1. 200g fresh cherries

  2. 350g 0% fat Greek yogurt

  3. Grated zest and juice of 1 small orange

  4. 25g icing sugar

  5. 1tbsp kirsch or cherry liqueur

  6. 8 meringues

  7. 25g plain chocolate, grated

  1. Using a cherry stoner or small, sharp knife, remove the stones from the cherries.

  2. Place the cherries in a food processor with the yogurt, orange zest and juice, icing sugar and kirsch, if using. Whizz until smooth, then pour the mixture into a freezer-proof container with a lid.

  3. Freeze for approximately 2 hrs, or until the mixture begins to freeze around the edges. Break up the mixture using a fork, and stir until smooth. Repeat the process a second time, then return to the freezer for a final 1-2 hrs until firm.

  4. Remove the frozen yogurt from the freezer 20 mins before serving to allow it to soften slightly.

  5. Sandwich scoops between two meringue shells and sprinkle with the grated chocolate or a dusting of cocoa to serve.
