  1. 1 1/4 lbs 567g / 20oz Celery root (celeriac) - peeled, and Cut into 1/2" pieces

  2. 1/4 cup 49g / 1.7oz Butter - (1/2 stick)

  3. 1 Shallot - chopped

  4. 1 Frozen petite peas - (16 oz) - thawed

  5. 1 teaspoon 5ml Celery salt

  6. Salt - to taste

  7. Freshly-ground black pepper - to taste

  1. Boil celery root in large pot of boiling salted water until just tender, about 5 minutes. Drain. Melt butter in heavy large pot over medium heat. Add shallot and saute until just tender, about 3 minutes. Add celery root, peas, and celery salt; saute until vegetables are heated through, about 8 minutes. Season to taste with salt and pepper.

  2. This recipe yields 6 to 8 servings.
