  1. 1 qt Cucumbers

  2. 1 1/2 c Brown sugar

  3. 1/2 tb Stick cinnamon

  4. 1/2 tb Celery seed

  5. 1 c Vinegar

  6. 1 c Water

  7. 1/2 tb Whole allspice

  8. 1/2 tb Mustard seed

  1. Select fresh, crisp cucumbers.

  2. Cover with a brine made by dissolving 2 tablespoons salt in 1 quart water.

  3. Let stand overnight.

  4. Drain.

  5. Wash.

  6. Soak overnight in clear water.

  7. Wipe dry.

  8. Cut in chunks.

  9. Cook in weak vinegar until tender.

  10. Pack loosely in sterilized jars.

  11. Cover with a pickling sirup made from remaining ingredients.
