  2. Caribbean Fried Bananas

  7. 4 medium bananas -- unpeeled

  8. 1 teaspoon butter

  9. 1/2 cup honey or sugar

  10. 1/2 teaspoon ground allspice

  11. 1/4 cup light rum

  12. 1/4 cup lime juice

  13. Place bananas on large nonstick baking sheet. Pierce skin of each banana

  14. several times with tip of sharp knife.

  15. 400 degrees until skins blacken completely,

  16. 15 to 20 minutes.

  17. In 10-inch nonstick skillet over medium heat, heat butter, honey and allspice until butter melts. Open skin of each banana with knife, then

  18. gently peel one side. Lay peeled side in skillet and remove remaining

  19. peel. Cook 5 minutes, spooning occasionally with cooking syrup.

  20. Remove any nearby flammable articles, add rum and ignite; shake pan until

  21. flames subside. Remove from heat. Add lime juice. Serve each banana warm

  22. with several spoonfuls of syrup. Makes 4 servings.
