  1. Recipe Instructions Crush vanilla wafers in a plastic bag. With an electric mixer, beat butter and sugar until well-mixed. And orange juice; mix well. By hand, blend in crushed vanilla wafers. (Food processor directions: Crush vanilla wafers in food processor fitted with steel blade. And butter, sugar and orange juice; process 10 to 15 seconds, or until well-mixed.) Roll mixture into small balls, then roll balls in coconut. Cover; refrigerate or freeze. Yields about 5 dozen (1 inch) balls. Testers notes: Simple-to-prepare, no-bake recipe with an attractive appearance. Great on a cookie tray because of the tangy, citrus taste. These cookies become soft if not stored in refrigerator or freezer.
