  1. 1 lb fresh beets, cleaned, trimmed.

  2. 1 Granny Smith apple, unpeeled, cored and diced.

  3. 1 bunch watercress, trimmed.

  4. 3 tbsp red-wine vinegar.

  5. 1 tbsp olive oil.

  6. 1/4 tsp salt.

  7. 1/8 tsp pepper

  1. Heat oven to 400. Wrap beets in foil, roast until tender, about 1 hr. Unwrap beets and let cool. When beets are cool, slip off their skins and dice. In salad bowl, toss together the beets, apple and watercress. Whisk together remaining ingredients to make dressing. Drizzle dresing over salad, toss gently to coat.
