  1. 4 Fresh salmon steaks,

  2. 1" thick - (5 oz ea)

  3. 3 tablespoons 45ml Fresh lemon juice

  4. Tarragon Sauce

  5. 2 Shallots - minced

  6. 2 tablespoons 30ml Chopped fresh tarragon

  7. 2 tspns crushed dried tarragon

  8. 1 cup 237ml Plain nonfat yogurt

  9. 1 cup 62g / 2 1/5oz Plum tomato - (3 oz) - seeded, and (medium)

  10. 1 tablespoon 15ml Minced flat-leaf parsley

  1. Start a grill or preheat broiler. Brush both sides of salmon with lemon juice. Grill for 5 to 6 minutes per side, turning once, until salmon flakes when prodded with the tines of a fork.

  2. Meanwhile, in a bowl, combine shallots, tarragon, yogurt, tomato, and parsley. Mix well.

  3. When salmon steaks are done, arrange on dinner plates and spoon some of the tarragon sauce alongside.
