  1. 3/4 cup (180ml) thickened cream

  2. 2 tablespoons icing sugar mixture

  3. 2 tablespoons Malibu, optional

  4. cup (25g) flaked coconut, toasted

  5. 4 scoops mango coconut creme ice-cream

  6. 4 large (1kg) bananas, sliced thinly

  7. NOTE: This recipe is best made close to serving.

  1. Beat cream, icing sugar and Malibu in a small bowl with an electric mixer until softly whipped.

  2. Preheat the oven to moderate (180C/160C fan-forced).

  3. Spread coconut in a single layer on an oven tray. Bake in a moderate oven for about 5 to 8 minutes or until surface is browned lightly; stir well. Transfer to a plate; allow to cool.

  4. Layer the ice-cream, bananas, coconut and cream mixture in 4 glasses.

  5. Not suitable to freeze. Coconut suitable to microwave.
