  2. 3 1 12-15 2-3 leaves

  3. 1 Spread

  4. 35 g 2 tablespoons 3 teaspoons 1 tablespoon 1/2 teaspoon 1/2 teaspoon 1 teaspoon 1 teaspoon Thin slices of heavy wholegrain bread,

  5. toasted

  6. Medium tomato, thinly sliced

  7. Fresh celery leaves, coarsely chopped

  8. Fresh iceberg lettuce, torn into bite-sized

  9. pieces Small onion, thinly sliced

  10. Raw sunflower seeds, presoaked at least 3

  11. hours

  12. or overnight in cool water and drained

  13. Dark Chinese sesame paste blended

  14. with 3 teaspoons water

  15. Water

  16. Sesame oil

  17. Salt

  18. Sugar

  19. Soy sauce

  20. Ground black pepper

  1. To prepare the spread, place all theingredients in a blender, and blend to a smooth paste.

  2. Taste and adjust salt if necessary.

  3. TO assemble the sandwich, slice and toastthe bread.

  4. Place a slice of toast on a plate andcover with one quarter o the spread. Arrange half the tomato, choppedcelery leaves, lettuce and onions on top of the spread.

  5. Top with a second slice of toastspread-side down, then cover the top of that slice with spread andarrange remaining vegetables on it.

  6. Complete the sandwich with the third sliceof toast placed spread-side down.

  7. Cut in half with sharp knife, or servewhole.
