  1. 2 long thin cucumbers

  2. 1 tablespoon finely chopped parsley

  3. 1 tablespoon finely chopped onion cup (approx) diced celery

  4. 1 cup (260g) minced meat cup breadcrumbs

  5. 2 tablespoons mayonnaise pinch of cayenne teaspoon nutmeg

  6. 2 tablespoons breadcrumbs, extra

  7. 1 dessertspoon butter

  1. Cut washed cucumbers in half lengthwise. Boil in salted water until almost tender, 6 to 8 minutes.

  2. Scoop out the centre. Combine all ingredients except the extra breadcrumbs and butter.

  3. Fill into the cucumber shells. Top with breadcrumbs and dot with butter. Bake for 20 minutes in a moderate oven.

  4. Serve very hot.
