  2. CUCUMBER FILLED WITH AVOCADO PESTO

  7. 1 lg Cucumber -- preferably hothouse

  8. 3 lg Garlic cloves -- chopped

  9. 1 tb Pine nuts

  10. 15 lg Basil leaves -- minced

  11. 1/4 ts Salt

  12. 1 Ripe avocado -- pitted & peeled

  13. 1 t Fresh lemon juice

  14. Sliced black olives

  15. Pimento strips for garnish

  16. If you have a hot-house cucumber, simply wash & dry

  17. it. If you don't, remove strips of peel, lengthwise,

  18. leaving thin strips of peel in place. The cucumber

  19. will look white with thin green stripes. Cut the

  20. cucumber in half, lengthwise. With an apple corer or teaspoon, remove the seeds by cutting a channel in the

  21. cucumber lengthwise down the center of both halves,

  22. three quarters of an inch wide and equally deep.

  23. Discard seeds.

  24. Crush the garlic. Pulverize the pine nuts in a

  25. blender, mini-food processor, or motar and pestle. In

  26. a small bowl, mix the garlic, pine nuts, basil leaves,

  27. and salt.

  28. Mash the avocado with a fork and pass through a sieve

  29. to pur e. Add the lemon juice and garlic-pine nut

  30. paste and mix well.

  31. Fill the channels evenly with the pesto. Garnish with

  32. olive slices and a single line of pimentos running

  33. down the center of each channel.

  34. Chill, cut into 1/3-inch pieces, and serve.
