  7. 4 ounces Olive oil

  8. 1 cup Dry vermouth

  9. 2 tablespoons Garlic--minced

  10. 8 Plum tomatoes -- peeled & seed

  11. 2 Shallots -- sliced

  12. Fresh basil -- chopped

  13. Fresh parsley -- chopped

  14. Fresh black pepper

  15. *Best to use a combination of mushrooms, oyster, shiitake, and portobella

  16. In a saut‚ pan heat half the oil and saut‚ mushrooms until wilted. Add the

  18. th and reduce the liquid by half Set aside. In a saucepan heat the remaining oi

  19. l till almost smoking. Toss in the tomatoes; garlic and shallots and braise und

  20. er high heat for 4-5 minutes. Add the mushrooms, reduced liquid and remaining i
