  1. 8 (6 ounces each) Jewel or Garnet yams

  2. 1/2 cup(s) (1 stick) salted butter , softened 2 tablespoon(s) maple syrup

  3. 1 teaspoon(s) grated peeled fresh ginger

  4. 1/4 teaspoon(s) ground cardamom

  5. 1/4 teaspoon(s) freshly ground black pepper

  1. Heat oven to 400 degrees F. Set yams directly on oven rack and bake for 1 hour or until tender when pierced with a fork.

  2. Meanwhile, place remaining ingredients in a mixer bowl and cream mixture until blended and smooth.

  3. To serve, cut across tops of roasted yams and spoon 1 tablespoon of maple-ginger butter into each opening.
