  1. Stuffed Acorn Squash

  2. Split 2 decent-sized acorn squashes lenthwise down the middle.

  3. Remove the seeds and bake, face-down, on an oiled tray for 30

  4. minutes at 350 or until tender enough to eat. Then they're ready

  5. for the filling:

  6. 2 medium-sized cooking apples, chopped

  7. 2 cups cottage cheese

  8. juice from 1 lemon

  9. 1/2 cup chopped onion

  10. 3 tablespoons butter

  11. dash of cinnamon

  12. 3/4 cups grated chedder

  13. Saute apples and onion in butter until onion is clear. Combine with

  14. the remaining ingredients and stuff the squash. Bake, covered,

  15. 15-20 minutes until heated through.
