  1. 2 apples, peeled, cored and finely diced

  2. 1 cup ripe mashed bananas

  3. 1 1/4 cups white sugar

  4. 2 cups all-purpose flour

  5. 2 eggs at room temperature

  6. cup unsalted butter at room temperature (10 tablespoons or 1 1/4 sticks)

  7. cup buttermilk

  8. 1 tsp salt

  9. tsp ground cinnamon

  10. tsp ground nutmeg

  11. 1 tsp vanilla extract

  12. 1 tsp baking soda

  1. Mix together 1¼ cup flour, 1 tsp baking soda, 1 tsp salt, ½ tsp nutmeg and ½ tsp cinnamon.

  2. In a large mixing bowl, beat the 1¼ sticks of butter and 1¼ cups of sugar together on medium speed until it has a light and fluffy texture.

  3. Without reducing the speed, add 2 eggs one at a time, add 1 tsp vanilla extract and ¼ cup of buttermilk.

  4. Finally, beat in the flour mixture.

  5. Use a spoon to fold in the apples and banana.

  6. Fill the lined muffin cups about half-way.

  7. Bake until toothpick inserted in the center comes out clean, about 20 to 25 minutes.
