  1. 1 pound smoked sausage , cut into bite size pieces,

  2. 1 onion , diced,

  3. 1 green bell pepper , diced,

  4. 1 clove garlic, diced,

  5. 1 cup hot salsa ,

  6. 1 can chicken broth,

  7. 1/2 cup water ,

  8. 1 can (16 ounces) red kidney beans,

  9. 1 tsp. Cajun seasoning ,

  10. 1/2 tsp. Cayenne red pepper ,

  11. 2 TBSP. parsley flakes

  1. Spray a heavy skillet or Dutch oven with Pam cooking spray. Sauté the sausage, onion, bell pepper & garlic until veggies onions are mostly clear, then add seasonings along with parsley. Add the salsa & simmer for about another 5 minutes, stirring well. Add chicken broth & water; then cook this for about 10-15 minutes more, add the beans & simmer until thoroughly heated, stirring every so often. {If more liquid is needed add more water or chicken, cooks choice}.
