  1. 2 tablespoons butter or 2 tablespoons margarine

  2. 2 tablespoons shallots , chopped

  3. 1 lb fresh asparagus , bottoms snapped, sliced diagonally into 1-inch pieces

  4. 2 cups sliced fresh mushrooms

  5. salt & pepper

  6. 4 tablespoons coriander, fresh, chopped

  1. Melt butter/margarine in a wok or heavy skillet. Add mushrooms and sauté, stirring until they are browned evenly.

  2. Add asparagus and sauté, stirring for 1 minute.

  3. Add salt, pepper and shallots; sauté 1/2 minute.

  4. Sprinkle with the coriander and serve.
