  1. 1 medium onion

  2. 1 orange, zest cut into thin strips

  3. 1 teaspoon cornflour

  4. 100ml water

  5. 2 oranges, juiced

  6. 2 tablespoons olive oil, divided

  7. 6 duck legs

  8. salt and pepper to taste

  1. Heat 1 tablespoon oil in a large pan over medium heat.

  2. Season duck with salt and pepper, then sear on all sides. Set aside.

  3. Saute onion in the same pan with 1 tablespoon oil until tender. Stir in cornflour and mix well.

  4. Transfer duck back to the pan. Pour over orange juice and water. Stir. Cover and simmer for 40 minutes or until very tender.

  5. Remove lid and let simmer for another 10 minutes or until sauce thickens. Pour sauce into a bowl and add a orange zest.

  6. Place duck on serving plate and garnish with a little sauce and orange zest. Serve hot with rice.
