  1. 1 pound blue crab meat

  2. 2 tablespoons butter

  3. 1/2 cup chopped celery

  4. 1/4 cup chopped peeled onion

  5. 1 small green pepper, seeded and chopped

  6. 1/2 teaspoon salt

  7. 1/8 teaspoon hot pepper sauce

  8. 1/8 teaspoon Worcestershire sauce

  9. 1/8 teaspoon ground black pepper

  10. 2 1/2 tablespoons evaporated milk

  11. 1/2 cup crushed saltine crackers

  12. 2 teaspoons vegetable oil

  1. In a medium saucepan, saute crab meat in butter. Add celery, onions and bell pepper. Cook until soft. Season with salt, hot sauce, Worcestershire sauce and pepper. Put the mixture in a bowl. Add milk and enough crushed crackers to bind everything together. Shape into 4 flat burgers. Cook on a grill or in a non-stick skillet, with vegetable oil, 5 to 10 minutes. Serve with hot sauce if desired.
