  1. 2 cups fresh cranberries

  2. 1/2 cup apple juice

  3. 2/3 cup honey

  4. 1 teaspoon finely chopped orange rind

  1. MAKING 1. In a medium saucepan, combine cranberries, apple juice and honey. Over medium heat, bring the mixture to boil, stirring constantly.

  2. Reduce the heat to a low flame and allow the sauce to simmer uncovered for 5 mins or until berries pop. The consistency will be thicker.

  3. Remove from gas or heat, and stir in the orange rind until well incorporated.

  4. Allow the sauce to cool to room temperature. Refrigerate and serve chilled.

  5. SERVING 5.The sauce compliments many dishes such as tea-time sandwiches, samosa's and even as a topping over a salad.

  6. TIP The sauce will last for atleast 2 weeks in the refrigerator
