  1. 3/4 cup oil

  2. 1/4 cup sugar

  3. 1/4 cup balsamic vinegar

  4. 1 (15-ounce) can black-eyed peas , drained and rinsed

  5. 1 bell pepper, diced

  6. 1/2 cup diced green onions

  7. 1 large tomato, diced

  8. 1 red bell pepper , diced

  9. 1/4 cup freshly chopped parsley leaves

  10. 3 tablespoons freshly chopped thyme and oregano leaves mixed

  1. In a small bowl, whisk together the oil, sugar and vinegar.

  2. In a large bowl mix together the remaining ingredients. Pour dressing on top of salad and mix well.
