  3. 1/2 cup butter -- melted

  4. 1 1/2 cups sugar

  5. 2 teaspoons vanilla

  6. 2 cups shredded carrots

  7. 8 ounce undrained crushed pineapple

  8. 3 cups flour

  9. 2 teaspoons baking soda

  10. 1 1/2 teaspoons cinnamon

  11. 1 teaspoon salt

  12. 3/4 teaspoon nutmeg

  13. 1/2 teaspoon baking powder

  14. 1 cup chopped nuts

  15. 1/2 cup raisins

  1. Preparation : Beat together eggs, oil, butter, sugar, and vanilla until foamy. Stir in carrots and pineapple. Add remaining ingredients; stir until just mixed. Pour into two buttered and floured loaf pans (8 1/2 x 4 1/2 inches). Bake at 325 degrees, 1 hour.
