  2. Egg Ribbon Soup With Shrimp And Spinach (Mf)

  8. 6 cups chicken broth

  9. 8 ounces peeled and deveined shrimpm -- net

  10. --cut into 1/2 inch chunks

  11. 1/2 pound spinach -- stemmed and washed

  12. 4 eggs -- lightly beaten

  13. salt and pepper

  14. oriental sesame oil

  15. --chili oil or chili paste

  16. --to drizzle in -- optional

  17. fresh lime wedges

  18. Bring broth to a boil in a medium saucepan. Add shrimp to soup and bring

  19. back to a boil. Add spinach and bring back to a simmer.

  20. Pour beaten eggs into soup in a steady stream; eggs will curdle into ribbon

  21. shaped strands. Season to taste with salt and pepper and remove saucepan

  22. from heat. Immediately ladle into soup bowls and drizzle a few drops of

  23. sesame or chili oil or chili paste into your soup. Add drops of lime juice

  24. if you wish.
