  1. 150g broccoli florets

  2. 150g cauliflower florets

  3. 1 green pepper, cut into 2 1/2cm pieces

  4. 1 cucumber - peeled, seeded and chopped

  5. 1 carrot, coarsely chopped

  6. 4 tablespoons Italian-style salad dressing

  1. Bring a large pot of salted water to the boil. Place the broccoli and cauliflower florets into the boiling water for one minute. Drain and rinse florets.

  2. Combine broccoli, cauliflower, pepper, cucumber, carrot and Italian salad dressing in a medium size mixing bowl. Cover the bowl and refrigerate the vegetables for one hour.
