Mashed Potato Chocolate Cake

    1. 1/8 ts Salt

    2. 3 Squares of unsweetened Chocolate

    3. 1 c Baking powder

    4. 1 ts Vanilla

    5. 1/2 c Milk

    6. 1 c Margarine

    7. 4 Eggs, separated

    8. 2 c Sifted flour

    9. 2 c Sugar

    10. 1 c Mashed potatoes

    1. Heat milk and chocolate in a saucepan, stir until melted and then cool. Cream 1 3/4 cups of the sugar with margarine. Add egg yolks and mashed potatoes; mix well. Beat egg whites until stiff but not dry. Add 1/4 cup of sugar to egg whites and beat. Fold into cake mixture. Bake at 350 degrees for 30 minutes. Randy Rigg --
